Healthy Crustless Broccoli and Ham Quiche

This Crustless Broccoli and Ham Quiche features a delicious egg filling and is topped with melty cheese. It’s low-carb and a healthy option for your breakfast or brunch.

I first had quiche when I worked at a bakery in high school.

Just a few bites of the creamy egg filling and flaky crust and I was hooked!

Fast forward to a few years ago when I was on a low-carb diet and was desperate for tasty meals that my family would also enjoy.

I had made a quiche recipe from my husband’s mom a few times, but it definitely was not low-carb.

So I modified the recipe to remove the crust and add in some vegetables and now it’s one of my family’s favorites for breakfast (or dinner)!

Step-by-Step Instructions

Combine 1/2 cup mayonnaise, 2 tablespoons flour, 2 eggs, and 1/2 cup milk in a small bowl and mix well.

PLACE 1 cup cooked, chopped broccoli, 1 cup cooked, chopped ham and 1/2 cup chopped onion in the bottom of a greased 9 inch pie dish.

POUR the egg mixture on top.

SPRINKLE 1/2 cup grated cheddar cheese evenly over the quiche.

BAKE at 350 degrees for 35-45 minutes, until the center is almost set (slightly jiggly). Allow to cool for 15 minutes before serving.

Recipe Tips and Substitutions

I always use low-fat mayonnaise for this recipe and it tastes just as good!

The easiest way to make this crustless quiche with ham and broccoli is to use frozen broccoli. I pour some into a microwave-safe dish, add enough water to cover the broccoli, cook it in the microwave for 2 minutes, drain and pour it into the pie dish.

If you want your quiche to be extra creamy, use some half and half or evaporated milk.

Instead of using ham, you can use chicken, shrimp, tuna, crab, or our family’s favorite, SPAM!

If you don’t like onions like me, you can substitute 1 teaspoon of onion powder or dried minced onion for the chopped onions.

If you would like to make this ham and broccoli quiche with a crust, you’ll follow the same directions, just pour everything into a par-baked pie shell. Then bake at 350 degrees for 45 minutes.

If you have some extra time, you can try slow baking this healthy broccoli quiche at 300 degrees for 1 hour for an extra creamy and velvety texture.

FAQ’s

Why is my quiche not fluffy?

If your quiche is not fluffy, you might need to adjust the ratio of egg to liquid. Try adding a bit more milk or squeezing out any extra moisture from your cooked broccoli.

Be sure to not overbake the quiche. Good quiche should jiggle a little when you cut into it. Try adjusting the cooking time down by a few minutes and see if that helps, too!

How long should quiche rest before cutting?

Let your quiche cool for at least 5 minutes, ideally 15, before cutting.

You can also make your quiche ahead of time and eat it the next day!

Ingredients
 
 

  • 1 cup ham, cooked and cubed into small pieces
  • ½ cup chopped onion
  • 1 cup mayonnaise
  • 4 Tablespoons flour
  • 4 eggs
  • 1 cup milk, or a combination of milk, cream, and half and half
  • 1 cup broccoli, cooked and chopped
  • 1 cup grated cheddar cheese

Instructions
 

  • Preheat oven to 350 degrees.
  • Saute the ham pieces and onion in a small frying pan until the ham and onions have browned.
  • Combine mayonnaise, flour, eggs, and milk in a medium bowl. Mix well.
  • Place broccoli, ham, onion, and half the cheese in the bottom of a greased 9 inch pie dish. Pour the egg mixture on top.
  • Sprinkle the rest of the cheese evenly over the quiche.
  • Bake at 350 degrees for 35-45 minutes, until the center is almost set (slightly jiggly). Allow to cool for 15 minutes before serving.
