So hear me out on the cauliflower thing. I know how it sounds. But this berry protein oatmeal has a whole serving of riced cauliflower stirred right in, and I promise you cannot taste it — my husband still doesn’t believe me.

All it does is make the oatmeal ridiculously nutritious and stretches one bowl into something that actually keeps you full past 10 AM.

It’s a super quick and easy breakfast that you probably already have the ingredients for right now.

Step-by-Step Instructions

Pour one oatmeal packet into a microwavable bowl (or use 1/3 – 1/2 cup rolled oats).

Add 1/3 cup soy milk, 3/4 cup riced cauliflower, and 1/2 cup frozen mixed berries.

Microwave on high for 2 minutes. Pour in 1 scoop of vanilla protein powder and stir to combine.

Recipe Tips

This is the easiest recipe ever because it uses an oatmeal packet. I like brown sugar, but you can use whatever flavor you want or just regular rolled oats.

If you don’t want to use protein powder, you can use protein oatmeal packets or just omit it for less protein in the serving.

Recipe Costs

This recipe costs $3.02 per serving which is a great price for breakfast! You could save a little money if you use bulk oats and omit the protein powder, but it’s not too much of a stretch to leave them in too.

  • Oatmeal packet – $0.31
  • Soy milk – $0.11
  • Riced cauliflower – $0.65
  • Frozen mixed berries – $0.45
  • Vanilla protein powder – $1.50
