I actually created this bowl on accident…I needed lunch and threw together a few random ingredients I had on hand to get rid of leftovers. What came together was fresh, filling, and slightly impressive… without actually putting in the effort.

We’re talking crispy frozen falafel, microwaveable rice cups, and creamy store-bought tzatziki—all layered up with crunchy veggies for that “I totally planned this” vibe.

Step-by-Step Instructions

Cook 3-4 frozen falafel according to package instructions.

While the falafel are cooking, heat up 1 single serve rice cup in the microwave. I used basmati, but you can use whatever you have on hand (even leftover if you want)!

Plate your bowl with the warm rice, cooked falafel, chopped cucumbers, mixed spring greens, tzatziki sauce, and naan on the side.

Recipe Tips

  • Feel free to make this recipe your own! Use what you have on hand but follow this formula: plant-based protein, leafy green base, rice, sauce.
  • If you want to dress the greens and cucumbers, you can toss them with a small amount of olive oil, lemon juice, salt, and pepper. But I find once you mix everything together with the tzatziki, it doesn’t need dressing at all!
