This Chicken Sausage and Gnocchi Skillet is the best weeknight dinner! Featuring crispy chicken sausage, fresh kale, and soft gnocchi all covered in a zesty pasta sauce, you’ll love how quickly this dinner comes together.

I love this dinner for the fresh ingredients and just how easy it all comes together!

It’s perfect for nights when you don’t feel like doing a lot of cooking and it’s so easy to keep the ingredients on hand.

This recipe works because it’s:

  • Great for busy families. All of the steps are so easy, your kids can help. Just put everyone in charge of one element of the meal and it will be ready in no time!
  • Perfect food storage meal. All of the ingredients expect for the Parmesan and basil can be stored in your freezer or on your shelves, making this a super accessible meal!
  • Full of healthy ingredients. The nutrients from the vegetables and the healthy fats from the olive oil make this a delicious, non-inflammatory meal.

Step-by-Step Instructions

Add 12 ounces of brussels sprouts (washed and halved) to a small bowl and drizzle with 1 Tablespoon olive oil and 1 teaspoon of Italian seasoning. Gently toss to coat.

Add brussels sprouts to an air fryer basket and cook at 375 degrees for 5 minutes.

After 5 minutes, shake the air fryer basket to redistribute the brussels sprouts and return to the air fryer. Cook for an additional 5-10 minutes until the brussels sprouts are crispy, but not burnt.

Heat a large pot of water over high heat until boiling. Cook 16 ounces of gnocchi according to package directions. Drain once done cooking.

While the brussels sprouts and gnocchi are cooking, slice 4 chicken and apple sausage links into coins. Add to a medium frying pan and cook until both sides are browned.

Reduce the heat to low, add 3-4 leaves of chopped kale to the sausage, and cook until the kale has wilted.

Add the drained gnocchi and 23 ounces of pasta sauce to the sausage and stir to combine.

Top the gnocchi with freshly grated Parmesan cheese and fresh basil with the brussels sprouts on the side.

Recipe Tips and Substitutions

This recipe works great with whatever fresh vegetables you may have leftover from the week. Consider tossing in any of these options for added nutrients:

  • Mushrooms
  • Zucchini
  • Tomatoes
  • Carrots
  • Peppers

You also don’t have to use gnocchi if you have other pasta on hand. Just be ready for a longer cooking time with traditional pasta.
