Chicken Sausage and Gnocchi Skillet

Ingredients
  

  • 12 ounces brussels sprouts, washed and halved
  • 1 Tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 16 ounces gnocchi
  • 4 chicken and apple sausage links, I love Aidell's
  • 3-4 kale leaves, chopped
  • 23 ounces pasta sauce
  • Parmesan cheese, freshly grated
  • fresh basil, optional

Instructions
 

  • Add brussels sprouts to a small bowl and drizzle with olive oil and Italian seasoning. Gently toss to coat.
  • Add brussels sprouts to an air fryer basket and cook at 375 degrees for 5 minutes.
  • After 5 minutes, shake the air fryer basket to redistribute the brussels sprouts and return to the air fryer. Cook for an additional 5-10 minutes until the brussels sprouts are crispy, but not burnt.
  • Heat a large pot of water over high heat until boiling. Cook gnocchi according to package directions. Drain once done cooking.
  • While the brussels sprouts and gnocchi are cooking, slice sausage links into coins. Add to a medium frying pan and cook until both sides are browned.
  • Reduce the heat to low, add chopped kale to the sausage, and cook until the kale has wilted.
  • Add the drained gnocchi and pasta sauce to the sausage and stir to combine.
  • Top the gnocchi with freshly grated Parmesan cheese and fresh basil with the brussels sprouts on the side.
