I ate similar pancakes my first time to Hawaii, so I thought it’d be fun to try to recreate them at home, but with some added protein!

Pancakes are such an easy breakfast option for the whole family, and we love using Kodiak Cakes for added protein and fiber.

Step-by-Step Instructions

Add 2 cups of Kodiak Cakes flapjack and waffle mix (or your favorite protein pancake mix), 1½ cups milk, 2 eggs, and 1 teaspoon coconut extract to a large mixing bowl and mix until combined.

Heat a large griddle or pan to medium-high heat. Spray with cooking spray and pour ¼ cup batter in different sections of the griddle. Cook until bubbles form. Flip and continue to cook until golden brown.

While the pancakes are cooking, toast ¼ cup shredded coconut in a small frying pan over low heat, being careful not to burn it. Chop 1 banana, 1 mango, and ¼ cup macadamia nuts and set aside.

To make the coconut syrup, add 13.5 ounces canned, full fat coconut milk and 3 tablespoons of coconut sugar to a medium saucepan. Heat to a gentle boil, then lower the heat and continue to cook until thickened, stirring constantly so it doesn’t burn.

Top pancakes with fresh fruit, macadamia nuts, toasted coconut, and coconut syrup. Enjoy!

Simmer it a little longer to reduce and thicken, or mix in a tiny bit of cornstarch (start with ½ teaspoon mixed with water) to help it along. Just be sure to stir constantly to avoid burning.

Can I leave out the coconut extract?


Yes, but the extract adds a subtle coconut flavor that really brings the tropical theme together. If you skip it, you might want to add a little extra toasted coconut on top.
