Ingredients

  • 16 ounces brie cheese, 2 wheels
  • 2 packages mini phyllo cups, 30 cups
  • cup heavy cream
  • 2 Tablespoons olive oil
  • 1 clove garlic, minced
  • ½ cup whole cranberry sauce
  • cup chopped pecans
  • cup pomegranate arils
  • ½ cup raw honey
  • fresh rosemary, optional

Instructions

  • Cut the rind off the cold brie starting with the top and bottom and the carefully cutting around the edges in a circle. Chop the brie into smaller pieces and place into a medium mixing bowl and let it come to room temperature (30 minutes - 1 hour).
  • While the brie is coming to room temp, open 2 packages of mini phyllo cups and place on a pan or wooden cutting board.
  • When the brie is soft, mix on medium speed using a hand mixer for 5 minutes. Then add ⅓ cup heavy cream, 2 tablespoons of olive oil, and 1 clove of minced garlic. Finish whipping the brie until it becomes light and fluffy. The brie will remain firm at first, but as you mix it will turn into a soft spread.
  • Add the whipped brie to a piping bag and pipe a small amount into each phyllo cup. Then spoon a small amount of cranberry sauce on top.
  • Top each bite with a pinch of chopped pecans, some pomegranate arils, and a drizzle of honey. Garnish with rosemary sprigs if desired.
