Learn how to make easy and elegant cranberry brie bites with creamy whipped brie, tangy cranberry sauce, and festive toppings—perfect for holiday gatherings or appetizers!
Cut the rind off the cold brie starting with the top and bottom and the carefully cutting around the edges in a circle. Chop the brie into smaller pieces and place into a medium mixing bowl and let it come to room temperature (30 minutes - 1 hour).
While the brie is coming to room temp, open 2 packages of mini phyllo cups and place on a pan or wooden cutting board.
When the brie is soft, mix on medium speed using a hand mixer for 5 minutes. Then add ⅓ cup heavy cream, 2 tablespoons of olive oil, and 1 clove of minced garlic. Finish whipping the brie until it becomes light and fluffy. The brie will remain firm at first, but as you mix it will turn into a soft spread.
Add the whipped brie to a piping bag and pipe a small amount into each phyllo cup. Then spoon a small amount of cranberry sauce on top.
Top each bite with a pinch of chopped pecans, some pomegranate arils, and a drizzle of honey. Garnish with rosemary sprigs if desired.
