Mediterranean Street Cart Fries

Cook sweet potato fries according to package directions.


Add the tomatoes, cucumber, chickpeas, and salad dressing to a small bowl and stir to combine.


Mix the yogurt, lemon juice, oregano, salt and pepper in a small bowl. Taste and adjust flavors as needed.


Layer the warm fries with the chickpea salad roasted corn, and banana pepper rings. Top with feta cheese, garlic aioli mayo, and  the yogurt dressing.
