Creamy Gnocchi with Tomatoes and Spinach

– Olive oil – Garlic – Cherry or grape tomatoes – Crushed red pepper flakes – Salt and pepper, to taste – Gnocchi – Chicken broth – Half-and-half – Spinach  – Shredded parmesan cheese

Ingredients

Brown garlic

Heat olive oil in a large skillet over medium-low heat and cook minced garlic for 1 minute.

Add tomatoes

Add tomatoes to the skillet and sprinkle with crushed red pepper flakes, salt, and pepper. Cook until tomatoes start to burst.

Add gnocchi

Add gnocchi, chicken broth, and half-and-half to the skillet. Cook on medium-low until gnocchi is warmed through.

Add spinach

Once the gnocchi is warm, add spinach and stir until the spinach has wilted.

Finish with cheese

Remove the skillet from heat and sprinkle with parmesan cheese and salt and pepper, to taste.
