Sweet and Sticky Chex Mix

Sticky Chex Mix features two different kinds of cereal and almonds covered in a delicious sugar syrup. It's sweet, crunchy, totally addicting, and the perfect holiday treat!

Ingredients
 
 

  • 10 cups Rice Chex Cereal
  • 5 cups Corn Chex Cereal
  • 1 ½ cups light corn syrup
  • 1 ½ cups granulated sugar
  • 1 cup + 2 Tablespoons margarine*, 2 sticks + 2 Tablespoons
  • 1 teaspoon vanilla
  • ½ cup almonds, sliced

Instructions
 

  • Combine Rice Chex and Corn Chex in a large bowl and set aside.
  • Add corn syrup, granulated sugar, and margarine to a medium saucepan and bring to a boil.
  • Boil for 2 minutes (set a timer).
  • Remove the syrup from the heat and add vanilla. Pour the syrup over the cereal and stir to make sure everything is coated.
  • Pour the cereal onto large metal baking sheets. Add sliced almonds and mix everything together.
  • Allow the Chex mix to cool. Store in airtight containers.

Since I first published this recipe, we've moved toward a low-tox lifestyle. I still wanted to try this recipe, but wanted to incorporate better-for-you ingredients. These are the swaps I made:
  • 15 cups Barbara's Multigrain Spoonfuls
  • 1 ½ cups Agave syrup
  • 1 ½ cups coconut sugar
  • 1 cup + 2 Tablespoons butter
  • 1 teaspoon vanilla
  • ½ cup almonds, sliced
Follow the recipe instructions as written!
The syrup turned out a darker color because of the Agave and coconut sugar but it still made for a tasty treat! It has a different flavor than the original recipe but it's so good my family couldn't stop eating it!
