HEALTHY LASAGNA ZUCCHINI BOATS
– Ground beef – Garlic – Olive oil – Tomato paste – Canned tomatoes – Salt, pepper, oregano – Zucchini – Cottage cheese – Mozzarella cheese
Brown ground beef, then add tomatoes and seasoning. Cover and simmer.
Slice the ends off the zucchini and then slice each in half. Scoop the centers from zucchini.
Brush zucchini with olive oil. Place the zucchini in a baking dish. Fill each boat with cottage cheese.
Carefully pour the meat sauce over the zucchini. Cover the baking dish and bake for 30 minutes.
Remove the foil and sprinkle mozzarella cheese over the sauce. Return the dish to oven for 5 minutes.
