CILANTRO CHICKPEA SALAD
– English cucumber – Cherry tomatoes – Avocado – Chickpeas – Feta cheese – Cilantro leaves – Garlic clove – Olive oil – Lime juice – Salt and pepper
Wash and chop the cucumber and tomatoes. Slice and dice the avocado.
Add to bowl
Add the veggies and rinsed chickpeas to a medium mixing bowl.
Blend cilantro leaves, garlic clove, olive oil, lime juice, and salt and pepper until combined.
Add dressing and feta to the bowl and mix well.
