Chile Relleno Casserole

– Colby Jack cheese, or Monterey Jack – Whole green chiles – Eggs – Flour – Evaporated milk – Tomato sauce

Ingredients

Slice cheese

Slice Colby Jack cheese into even pieces.

Arrange chiles

Place a layer of 6 whole green chiles on the bottom of a greased 9×13 baking dish.

Layer cheese and chiles

Top the chiles with a layer of the cheese slices, then repeat steps 2 and 3.

Make egg mixture

Beat together eggs, flour, and evaporated milk. Pour the mixture over the layers of cheese and chiles.

Bake

Cover the pan and bake for 25 minutes. Remove from the oven and add tomato sauce on top. Finish baking for 25 minutes.
