This is probably the first time I’ve had raw zucchini served in a salad and it won’t be the last! This dish was so delicious I’ll be making it all through zucchini season!

This zucchini cherry tomato salad works because it’s:

  • Super simple to throw together. You’ll only need 15 minutes to get this salad from prepped to ready to serve.
  • Light and refreshing. The delicious za’atar dressing combined with the crisp vegetables and creamy feta make this the perfect side for summer.
  • A great way to use up zucchini. When garden zucchini are overflowing, you can use up several in this delicious dish!

Step-by-Step Instructions

Wash and halve 1 pint of cherry tomatoes. Roughly chop ½ cup Kalamata olives. Set aside.

In a medium bowl combine ⅓ cup olive oil, 2 Tablespoons red wine vinegar and 1 Tablespoon za’atar seasoning. Add ¼ teaspoon of both salt and pepper, cherry tomatoes and olives. Toss to coat

Create ribbons from 4 small zucchini either using a Y vegetable peeler or a mandolin. Place zucchini ribbons on a large platter and top with the tomato mixture. Crumble 4 ounces of feta over the top and season with additional salt and za’atar to taste.

Garnish with ¼ cup pine nuts and fresh basil leaves. Serve immediately.
