Chicken and Broccoli Casserole with mayo is a creamy casserole made with simple pantry ingredients. Served over rice, you can have that Sunday dinner taste any night of the week!

Ingredients
 
 

  • 3 chicken breasts, thawed and trimmed of fat
  • 12 ounces frozen broccoli
  • 10.5 ounces cream of chicken soup
  • ½ cup mayonnaise
  • 1 tablespoon lemon juice
  • ½ cup milk
  • ¼ teaspoon pepper
  • ½ teaspoon paprika
  • Grated parmesan cheese
  • Cooked rice

Instructions
 

  • Preheat oven to 350 degrees.
  • Cook chicken as desired (pan-fried, shredded, or boiled). Cook broccoli in the microwave in the package (if it's steamable) or in a microwave-safe dish with a little water in the bottom until warm.
  • Layer in a 9 x 13 casserole dish.
  • Mix remaining ingredients, except cheese, and pour on top of the chicken and broccoli.
  • Sprinkle with cheese.
  • Bake at 350 degrees for 25 minutes until heated through. Serve over cooked rice.

For a creamier sauce, use 2 cans of cream of chicken soup.
