Sweet Potato Crunch Casserole

– sweet potatoes – butter – salt – egg – brown sugar – vanilla – cinnamon – nutmeg – half and half – pecans

Ingredients

Cook sweet potatoes

Wash and dry the sweet potatoes and cook them in the Instant Pot.

Mix topping

While the potatoes are cooking, mix together butter, flour, brown sugar, chopped pecans, and cinnamon.

Mash sweet potatoes

Remove the skins from the potatoes and mash them. 

Mix potatoes with spices

Mix potatoes with butter, salt, egg, brown sugar, vanilla, cinnamon, nutmeg, and half and half.

Cover with topping

Pour the potato mixture into a 9×13 casserole dish and sprinkle the brown sugar topping over the potatoes.
