Zucchini, Black Bean, and Rice Skillet

– white rice – oil – small zucchinis – onion – green bell pepper – black beans – fire-roasted diced tomatoes  – dried oregano – cheddar cheese

Ingredients

Cook rice

Cook rice according to package directions either on the stove, in a rice cooker, or Instant Pot.

Cook zucchini

Add zucchini, onion, and bell pepper to an oiled skillet and cook until vegetables are tender.

Add beans and tomatoes

Add beans, undrained tomatoes, and oregano and stir well.

Add rice

Once the rice is done, add it to the skillet and stir to combine.

Top with cheese

Sprinkle the rice mixture with cheese, cover, and turn the heat to low.
