Italian Turkey Patties with Vegetables

– ground turkey – egg – seasoned bread crumbs – salt, ground thyme – olive oil – onion – canned diced tomatoes – zucchini – minced garlic – canned sliced white potatoes – dried parsley

Ingredients

Season turkey

Mix turkey, egg, bread crumbs, salt, and thyme in a bowl. Shape into 6-8 patties.

Cook patties

Add turkey patties to hot skillet and cook until browned and juices run clear. 

Cook onion

Add onion to pan drippings and cook, stirring occasionally, until golden.

Cook vegetables

Add tomatoes and zucchini to skillet, cover, and cook for 10 minutes.

Heat through

Stir in potatoes and add patties on top of vegetables. Heat over low until warm.
