The Easiest Crock Pot BBQ Pineapple Chicken Thighs

This recipe for Crock Pot BBQ Pineapple Chicken features tender thigh meat covered in a sweet and spicy sauce. You’ll only need 4 ingredients to make this dump and go dinner!

I’ve been loving recipes with chicken thigh meat lately!

I was a strict white meat eater until a few years ago when I discovered the dark meat on birds really is more moist and flavorful.

Not to mention, chicken thighs are usually a lot cheaper than chicken breast meat.

This recipe for Crock Pot BBQ pineapple chicken thighs is one of my favorites because the sweet BBQ sauce reminds me of a summer cookout.

But instead of standing over a hot grill to get the amazing flavor, you just dump the ingredients in your slow cooker and you’re good to go!

You could even double this recipe to feed a crowd for a family Sunday dinner.

Step-by-Step Instructions

PLACE 3 pounds of skinless chicken thighs (5 pieces) into your slower cooker.

MIX 9 ounces of your favorite BBQ sauce, 1 (20 ounce) can of drained crushed pineapple, and 1/2 cup brown sugar well in a medium bowl.

POUR the BBQ pineapple sauce over the chicken thighs.

PLACE the lid on your slow cooker and cook on HIGH for 5 hours, turning the chicken pieces over every so often to ensure even cooking.

SERVE chicken and sauce over cooked rice.

Recipe Tips and Substitutions

The original recipe called for a full bottle of BBQ sauce and undrained pineapple. I found those ingredients made way too much watery sauce. The chicken thighs will release their juice as they cook, so it’s best to drain the pineapple and only use half a bottle of BBQ sauce. You can always add more in later if it’s not saucy enough!

You can use bone-in or boneless chicken thighs, just make sure the skin is removed from whichever type you pick.

You could substitute chicken breasts for the chicken thighs in this recipe if that’s all you have. You will just need to check that the chicken breasts are fully cooked after 5 hours.

If you don’t have time to mix the sauce ingredients together, you can dump them individually over the chicken, you’ll just need to stir the sauce together once the chicken is done.

  • 20 ounces crushed pineapple (1 can), drained
