This Chicken Sausage and Sweet Potato Skillet features browned sausage, tender fruits and veggies, and a cheesy finish. It’s so easy and delicious, you’ll want to eat it all day long!

When I started changing my eating to include more product and less processed ingredients, this was one of the first recipes I found.

I love the simplicity, ease, and taste of this recipe.

This recipe works because it’s:

  • Made with whole ingredients. This dish combines fresh fruits and vegetables along with clean ingredient meat to create a wholesome meal.
  • Simple and easy. Dinner will be on the table in less than 30 minutes when you’re making this skillet.
  • Flavorful and filling! The flavors from the sausage and product come together to make a tasty meal that’s sure to leave you full and recharged.

Step-by-Step Instructions

Chop 4 chicken sausage links into coins and set aside.

Chop 2 medium apples (Fuji or Gala) into bite-sized pieces and set aside.

Heat a large frying pan over medium heat. Spray with cooking spray and add the chicken sausage. Cook until browned, then remove and set aside.

Add 10 ounces of frozen sweet potatoes and 1 cup of frozen chopped onion to the frying pan and cook until soft and warm. Season with salt and pepper.

Add apples and 2 cups of spinach to the frying pan and cook until the spinach has wilted and the apples are soft.

Add the sausage back to the pan and warm through.

Top the skillet with ½ cup shredded mozzarella cheese and let melt before serving.

Recipe Tips and Substitutions

My favorite chicken sausage to use for this dish is Aidell’s! The flavor and ingredient quality can’t be beat.

I always default to using Fuji or Gala apples, but choose your favorite or what’s on sale at the store this week.

Instead of using frozen sweet potatoes, you can cook fresh sweet potatoes in the microwave or oven. Peel and cube the raw potatoes and place on a microwave or oven safe dish. Spray with cooking spray and cook for 2 minutes in the microwave or for 45 minutes in the oven at 400 degrees Fahrenheit.

The same goes for the onion! I like using frozen vegetables for the convenience and because I don’t cry with the frozen version, ha.

Feel free to swap the mozzarella cheese for a dairy-free version if you have certain dietary restrictions. My favorite is Daiya.

This recipe is delicious for either breakfast or dinner. Or both! And feel free to use what you have on hand. You can add or substitute:

  • Red or Yukon potatoes

  • Egg whites
  • Beets

While this skillet dinner is best enjoyed fresh, you can definitely prep some of the ingredients in advance to save time. You can chop the produce and sausage ahead of time and store them in the fridge until you’re ready to cook.

Absolutely! This skillet dinner is great for meal prep. Simply portion it out into containers once it’s cooked and store it in the fridge for up to 3-4 days. It reheats well in the microwave or on the stove top.
