This Chicken and Broccoli Casserole with Mayo is so simple to make, you probably have the ingredients in your pantry and fridge right now! It tastes like a Sunday dinner, but it’s easy enough to prepare any night of the week.

Chicken and broccoli casserole with mayo is one of my husband’s favorite dinners.
His mom made it often growing up, so I decided to continue the family tradition. It’s such an easy dish to make and pretty cheap too. I often have all of the ingredients on hand already.
However, it always felt like it was missing something so I decided to start serving it over white rice.
The creamy sauce soaks into the rice and it pulls the dish together perfectly if I do say so myself!
Step-by-Step Instructions
COOK 3 chicken breasts as desired (pan fried, shredded, or boiled).
COOK (1) 12 oz. bag frozen broccoli in the microwave in the package (if it’s steamable) or in a microwave-safe dish with a little water in the bottom until warm.
LAYER the chicken and broccoli in a 9 x 13 casserole dish.
In a medium bowl, MIX together 1 can cream of chicken soup, ½ cup mayonnaise, 1 tablespoon lemon juice, ½ cup milk, ¼ teaspoon pepper and ½ teaspoon paprika and POUR on top of the chicken and broccoli.
SPRINKLE with grated Parmesan cheese and BAKE at 350 degrees for 25 minutes until heated through.
SERVE over cooked rice.
Recipe Tips and Substitutions
You can prepare the chicken a number of ways. I like to cube it and cook it in a frying pan. You could also boil the chicken breasts and cut them. Or you could prepare the chicken in your Instant Pot and shred it.
If you don’t like frozen broccoli, you could substitute fresh broccoli. The frozen broccoli is definitely more convenient, though.
If you want an extra creamy sauce, add in another can of cream of chicken soup. My sister-in-law made it this way recently and it was super tasty!
You can substitute sour cream for the mayonnaise for a tangy sauce.
Try adding breadcrumbs with the Parmesan cheese for an added crunch!

Usually, any grains or vegetables in a dish would be overcooked and mushy by the time the meat is done, so most casseroles use pre-cooked proteins.
However, if your casserole ingredient list includes raw grains or hearty vegetables like carrots or potatoes, it’s possible to use uncooked meat.
Just be sure to cut the protein into smaller pieces so it cooks quickly and that you check for complete doneness before digging in!
As a rule of thumb, if a recipe has uncooked grains (rice, pasta, couscous, etc.), it should always be covered, and casserole dishes with pre-cooked ingredients can be left uncovered.
However, if a recipe is topped with cheese, you may need to cover the dish to ensure the cheese melts completely, which depends on the type of cheese, the cook time and temperature.
You can remove the cover for the final minutes of cooking for a crispier, caramelized finish.

- 10.5 ounces cream of chicken soup
- ½ cup mayonnaise
